Quick and drool-worthy Recipe of Eggless Banana Walnut Choco Cake

Motherhood changes you in every possible way. When I became a mother, I turned more health-conscious. I try to cook and serve healthy food for my family. But at the same time, I don’t compromise on taste. So, I am always on a lookout for interesting, healthy yet delicious recipes. My love for cakes is undying so I always keep a stock of homemade muffins or cakes to satisfy my sweet tooth. I experimented with a lot of ingredients and tried many recipes and finally came out with a perfect one. So today, I am going to share a quick, tempting and healthy Eggless Banana Walnut Choco Cake recipe which you can eat without any guilt as the ingredients used are mindful.

Ingredients:

2 ripe bananas

1 cup whole wheat flour (aata)

1/2 tsp baking soda

2 tsp unsweetened cocoa powder

1/2 tsp vanilla essence

1 tsp baking powder

1/2 cup brown sugar

3 tsp curd

1/2 cup oil

1/2 tsp cinnamon powder

Walnuts, chocolate chips, raisins for garnishing

CHRISTMAS SPECIAL CAKE

Method:

  1. Preheat the oven at 180 degrees.
  2. Mash the bananas well using a fork or masher or you can even blend it using a blender. Make sure there are no lumps.
  3. In a pan, sieve the flour, baking powder, and baking soda.
  4. Now add mashed banana, sugar, oil, vanilla essence, cinnamon powder, curd, choco powder to the flour and mix well.
  5. Grease a baking tray or muffin molds and pour the mixture in it. Pat and level it well.
  6. Decorate with raisins, choco chips, and walnuts and bake at 180 degrees for 20 minutes. You can make the loaf /cake/muffins using the same batter.
  7. To check if it is done or not, insert a toothpick gently and if it comes out clean, it is ready. If it comes out sticky, wait for a few more minutes. As every oven is different and so is the temperature setting, keep checking at regular intervals to avoid burning. After a few attempts, you will get a hang of your oven as in how much time it takes.
  8. The muffins/ cake is ready to be served. Enjoy it with your evening tea or coffee.
  9. If you wish to make the cake richer with icing, you can mix mascarpone cheese and thick cream together, whisk it well with 1 /2 cup sugar and spread it over the cake. Garnish with nuts of a pack of gems.

wow! great recipe vartika. To make this even healthier you can substitute brown sugar with date paste. This will increase the fibre content and the health quotient as well.
