Let’s do a makeover of leftover rice, a healthy and tasty recipe! #myfriendalexa

Last week, we had friends get together at my place and we decided to have a potluck party. Potlucks have always been my favorite as you have so many choices at the same time. As expected, there was a lavish spread and many delicacies were prepared by all of us like aloo Tikki, chhole, noodles, Manchurian, cutlets, kebabs, salads, various curries, and rice. Even after we ate to our heart’s content, a lot of rice was left. So, the next morning, I decided to do something interesting with it ad serve it with a new look, and new taste. Here is the recipe of leftover rice:

Ingredients:

Boiled rice 2 Cup

Boiled potatoes 1 Cup

Chopped Onion 1 Cup

Grated carrots 1/4 cup

Chopped Ginger

Grated beetroot 1/4 cup

Chopped green chilli

Paneer 1/4 cup

Chopped fresh coriander leaves

Chick Pea Flour (Besan)

Black pepper

Salt to taste

 

A makeover of leftover rice:

Take boiled rice in a bowl and mash it well. Add boiled and mashed potatoes. Make sure the potatoes are mashed well and no hard pieces are left. Now add all the other chopped ingredients like onion, ginger, green chilli, grated paneer, coriander leaves, carrot, and beetroot. Add salt, pepper, besan and give it a mix. Now check the consistency of the mixture. It should not be watery. You can add little more besan to make it thicker. Besan is used here only for the binding purpose so dont overuse it as rice and potatoes already blend well together. Make tikkis of the mixture and keep them in the freezer for 30 minutes.

Now, add oil in the pan, and shallow fry the tikkis till golden from both the sides. Serve with mint chutney or tomato ketchup and tea.

I loved the recipe and it will be a good addition to my cooking as i hate wasting any leftovers and keep looking for options to re use them.

Lovely post! Took me back to my childhood days when my Gujju mom used to make pancakes out of leftover rice – it was a recipe that she got from my Nani – we called it Chhavda and loved to devour the hot pancakes dunked in the cold buttermilk. Thank you again for such a heartwarming post. Keep writing such informative posts.
